Job Summary:
We are currently hiring a Knife Operator skilled in using the curved Forschner cimeter knife for meat trimming, portioning, and fabrication. This role is essential in ensuring the efficient processing of beef, pork, or lamb cuts with precision and safety. Ideal candidates will have prior meat-cutting experience and demonstrate consistent knife control and attention to detail.
Key Responsibilities:
- Use a curved Forschner cimeter knife to accurately cut, trim, debone, and portion large cuts of meat according to company and customer specifications.
- Maintain high yields and low waste while ensuring consistent quality and appearance of meat cuts.
- Follow cutting charts, yield guides, and visual standards for each product.
- Work closely with the production team to meet daily production targets and timelines.
- Inspect meat for quality, identifying any defects or contamination before processing.
- Keep knife and work area clean, sanitized, and organized at all times.
- Sharpen and maintain knife blades to ensure consistent cutting performance.
- Adhere to company safety guidelines, PPE use, and sanitation protocols (HACCP/USDA/OSHA).
- Assist with packing, labeling, or weighing as required by production needs.
Qualifications:
- 1+ year of experience in meat cutting, butchery, or meat processing using professional knives (preferably a cimeter).
- Proven experience with a curved Forschner cimeter knife is strongly preferred.
- Ability to work in refrigerated environments (cold rooms).
- Strong attention to detail and commitment to product quality and consistency.
- Good physical condition; ability to stand for long periods and lift up to 50 lbs.
- Knowledge of food safety, personal hygiene, and sanitation practices.
- Team player with good communication skills and a strong work ethic.
Work Conditions:
- Environment: Cold, damp, and fast-paced meat processing facility.
- PPE Required: Safety gloves, cut-resistant aprons, hairnets, ear protection, etc.
Job Types: Full-time, Permanent
Pay: $20.00-$21.00 per hour
