Job Overview:
You will be working with our culinary team to prepare innovative, delicious dishes for both dine-in and take-out. This is a unique opportunity to work at our flagship location with Canada’s fastest growing hand roll bar. As the Head Chef, you will have the chance to lead, learn from, and work with talented chefs, as well as have the opportunity for growth within the organization.
Responsibilities:
- To ensure that all menus are consistently updated, paying special attention to seasonal availability
- Preparing food according to Hello Nori Quality Assurance standards in a timely manner
- Ensure menus are correctly calculated to maximize gross profit
- Train, mentor, and lead staff in all aspects in the kitchen
- Responsible for ordering and storing of sufficient stock of all materials
- Collaborate with management daily to be updated on special requirements, VIP's, catering events, etc.
- Ensure proper food safety and hygiene requirements are followed by all staff
- Report all maintenance deficiencies
- Submit cost proposals for menu items
- Provide geedback regarding the food quality of large bulk purchases
- Make sure food preparation, design standards, and presentation guidelines are followed
- Design standardized food presentation guidelines for each dish
- Monitor inventory levels
- Hire, train, and manage staff
- Scheduling and labour cost management
- Assisting the FOH in packaging production (e.g. making to go box, ginger, wasabi and soy)
- Experience in a sushi or Japanese style restaurant is preferred
- At least 5 years of experience as a chef
- At least 1 year experience in a kitchen leadership position
- Experience grilling and frying in a restaurant/commercial kitchen
- Knowledge of various types of Fish and Japanese cooking techniques
- Ability to work quickly and accurately
- Availability to work during hours of operation
- Food Safe Level 1 certification minimum
- Must be legally able to work in Canada
