Job Title: Prep Cook & Fornaio (Pizza/Bread Baker) – Full Time

Position Summary:
At Lou Pécou, we celebrate Italian culinary traditions with a focus on Pizza Classica, artisanal breads, and fresh, seasonal ingredients. We are seeking a skilled Prep Cook & Fornaio to oversee all pizza baking and bread production before and during service. This role is essential to ensuring product quality, consistency, and timing for our guests dining experience.
Key Responsibilities:
- Prepare and portion doughs, breads, and pizza bases according to Lou Pécou recipes and fermentation schedules.
- Operate and maintain the pizza oven and bread-baking equipment.
- Bake pizzas, focaccia, and other bread items to order during service, ensuring consistent quality and presentation.
- Coordinate with the kitchen team to ensure efficient service flow.
- Maintain high standards of food safety, hygiene, and cleanliness.
- Monitor ingredient stock levels and communicate supply needs to the Head Chef.
- Assist in general prep tasks (sauces, toppings, etc.) before service.
- Contribute to continuous improvement of baking techniques and menu items.
Requirements:
- Previous experience as a pizza baker (fornaio), bread baker, or in a similar kitchen role.
- Strong understanding of dough fermentation, baking techniques, and oven management.
- Ability to work efficiently under pressure in a fast-paced environment.
- Commitment to maintaining high quality and consistency.
- Full-time availability, including evenings and weekends.
- Team-oriented attitude and clear communication skills.
Job Type: Full-time
Pay: $17.00-$19.00 per hour
Expected hours: 30 – 40 per week
