The Forge is a new, fusion-style bagel bistro that is elevating the bagel scene in Winnipeg by offering unique, hand-formed artisan bagels directly inspired by the traditions of Poland and England. Unlike most bagels made in Winnipeg, our Polishire bagels are labour-intensive and require extensive stretching and hand-shaping to create the delicious, “creamy chew” that bagel aficionados love. When combined with wholesome ingredients and bold flavour profiles, our products attract those who crave a total taste experience – not just a breakfast staple.
To complement our Polishire bagels, we offer signature, handmade lifts (cream cheeses, jams, and spreads). In addition, we’ve curated a premium, custom-blended espresso and coffee that’s crafted for those who truly appreciate exceptional flavour. Details
We are seeking an experienced full-time Head Baker / Bakery Chef to lead and manage our new and growing venture. This role will be based out of our new location at 692 St. Anne’s Rd. and will work closely with our President and Director of Operations.
Key responsibilities include leading and managing the comprehensive baking operation of our new fusion-style bagel bistro ensuring the highest quality of bagels. This will include help overseeing the “concept to creation” of our Polishire Bagels, contributing to recipe and design, menu development, team management, inventory management and ordering supplies, quality control, and driving production to ensure a one of kind unique hand-formed artisan bagels.
Business operating hours will be 7:30am-2:00pm, Tuesday-Saturday; this role will work the appropriate full-time hours to accommodate the necessary production needed for business operations. Working hours typically require early morning start times to ensure fresh baked goods at opening. The commencement date will be in early October in anticipation of our grand opening in November 2025.

Responsibilities
- Planning and executing the daily production of baked goods and other items, following recipes and meeting production schedules.
- Creating, testing, and improving recipes, potentially adapting them for large-scale production.
- Leading, training, and mentoring baking staff, ensuring they adhere to established standards and procedures.
- Ensuring all baked goods meet quality standards, including taste, texture, and presentation.
- Monitoring stock levels, ordering supplies, and minimizing waste.
- Maintaining a clean and safe baking environment, complying with food safety regulations.
- Being involved in some customer interactions and special orders.
- Ensuring all equipment is in good working order and coordinating repairs or replacements.
- Hiring (with assistance from the management team), managing, and overseeing all baking and kitchen staff.
- Potential career advancement to Director of Baking Operations.
Qualifications
- Entrepreneurial mind set regarding product quality, customer service, operational efficiency, and team building.
- Extensive knowledge of baking techniques, ingredients, and equipment.
- Proven experience as a Head Baker / Bakery Chef or similar role.
- Strong leadership and supervisory skills.
- Proven experience and reliable performance for early morning start times.
- Computer and digital literacy to operate back of house systems and baking systems.
- Excellent communication and interpersonal skills.
- Ability to work under pressure and meet deadlines.
- Creativity and attention to detail.
- Knowledge of food safety and sanitation practices including valid Canadian food handler’s certificate.
- Organizational and inventory management skills.
