THE ROLE:

We are seeking a dynamic and strategic Director of Food & Beverage to lead an inspired & consistent luxury operation. With five outlets dispersed across a large resort as well as an Event Operations program made up of 22K sqft of unique function space, this role is suited for an accomplished Executive-level leader looking to join Canada’s largest owner & operator of hotels at a flagship asset. Upcoming renovations will require a thoughtful, creative approach to activations and involvement in both F&B and total hotel marketing plans. As an Executive Committee member, you will be responsible for supporting the overall success of the hotel.

Nestled in St. Andrews by the Sea, we are committed to providing exceptional guest experiences. This iconic gem will be embarking on a full transformation of all guestrooms, public areas, event spaces, dining experiences and the addition of a new build nordic spa – the perfect melding of history with modern amenities.

ACTIVITIES:

The duties of the Director of Food and Beverage include, but are not limited to the following:

  • Direct and oversee all aspects of the hotel’s F&B Division planning and service.
  • The candidate will be instrumental in gaining and retaining Guests, Associates & Clients for the entire organization.
  • Convey the hotel's image and atmosphere through an exemplary attitude, warm and friendly welcome, availability and frequent presence on the floor and ensures the highest product & service quality in all areas of Outlet’s and Event Operations.
  • The candidate helps craft and ‘live’ the hotels mission and is a member of the Executive Committee.
  • Act as an “orchestra conductor”, to ensure that all parties involved in the F&B Division (Braxton’s, Right Whale Pub, Golf Course F&B offerings, Poolside F&B offerings, In-Room Dining, large-scale Event Operations, Culinary, Associate Cafeteria & brand activations) are working together with the same goals and clarity of what success looks like, ensuring an optimal Guest experience as the number one priority.
  • Be a leader and trend-setter in culinary and beverage programming with strong business & people-leadership acumen.
  • Being highly visible and interacts with guests on a regular basis to obtain feedback on quality of food, beverage, service and overall satisfaction. Perform Department Head on Duty shifts on rotation.
  • Awareness of market trends, knowledge of competition and introduction of new food and beverage products to generate increased revenue and maintain competitive position in the market.
  • Ensure compliance with food handling and sanitation standards.
  • Promote and facilitate inter-departmental cooperation and communication to improve guest service and overall satisfaction.
  • Coordinate the selection, storage, maintenance and usage of all related food and beverage supplies and equipment.
  • Ensure proper liaison between the Event Management and the Banquet and Kitchen teams.
  • Ensures hosts are treated fairly and equitably; brings issues to the attention of Human Resources as necessary.
  • Ensure hotel policies are administered fairly and consistently, corrective measures and documentation.
  • Provide ongoing coaching and development to hosts and display an empathetic and open management style to positively impacting host satisfaction.
  • Review financial transactions and monitors budget/forecast to ensure efficient operation and adherence to budget, without sacrificing quality and service. Monitor for control risks.
  • Monitor actual and projected sales on a daily basis. Review meal period covers, room capture ratios and average cheques to ensure revenue goals are met or exceeded.
  • Other reasonable duties as required.
