The Alma Mater Society (AMS) is the University of British Columbia’s (UBC) student society, and works to improve the academic, social and personal lives of the 56,000 UBC students at its Vancouver campus. The AMS also runs nine food and beverage outlets, a catering and conference operation, and the AMS Student Nest, providing on-campus employment opportunities and generating revenue that goes directly back into supporting the students at UBC.

Position title: 1st Cook
Department: Food & Beverage
Reports to: Outlet Manager
Employee status: Full-time, Permanent, Hourly
Hours per week: up to 37.5
Compensation: $23 per hour, plus gratuities & benefits (health and dental plan after 3-months)
Position Purpose
The 1st Cook is responsible for the day to day kitchen operation including but not limited to preparing and executing menus according to the AMS recipes. The 1st Cook assists in providing the highest quality and presentation of the food, helps in proving a safe and healthy work environment by following AMS Health & Safety. They lead by example ensuring that the team members adhere to AMS standards at all times. This is position is well suited for early career industry professionals who are looking for a step up in responsibility and develop supervisory experience.

Duties and Responsibilities

• Report to the Chef to receive work orders for the day
• Reviews prep lists, catering BEOs and transfers
• Expediting orders for quick service in our outlets
• Managing a station
• Delegate responsibilities for prep to 3rd cooks and kitchen helpers and review progress through the day
• Oversee teams in the absence of the manager or senior supervisors
• Create prep lists for the following day
• Demonstrate a good understanding of shelf life by checking fridges, labels, dates and rotating product
• Help maintain cleanliness and organization of the kitchen by sweeping and mopping floors and removing trash
• Wash dishes, glassware and other kitchen equipment
• Works closely with the outlet manager to ensure the quality and presentation of the food, promotes a safe and healthy work environment by following AMS Health & Safety, and WorkSafe BC standards
• Ordering and preparing goods as needed to meet the expected business volumes
• Maintains cleanliness and organization of the kitchen to the highest standards
• Engage in cleaning duties such as, but not limited to, dish washing and floor mopping
• Executing orders in a timely manner to meet or exceed guest expectations in accordance to AMS standards
• Following AMS recipes and reducing food waste
• Ensuring ongoing safe operation of appliances, equipment and tools (WHMIS)
• Working with the AMS mission statement and values to operate a successful department
• Training of junior staff as required
• Other duties as required

Qualifications and Experience

• Culinary diploma, apprenticeship or equivalent restaurant/cooking experience is required
• Minimum of 2-3 years cooking professional kitchen experience in a high volume facility (e.g. - restaurant, production or catering kitchen, hotel, banquet hall)
• Previous experience leading a team or supervising a station is preferred
• Previous experience with training of junior staff is required
• Previous experience working on a line is required
• Experienced and speedy knife skills are required
• Wok cooking skills are an asset
• Minimum Food Safe level 1 certification or higher is required
• Excellent customer service skills
• Ability to work in a fast paced, multitasking environment with little supervision
• Ability to lift up to 12 kgs (26.4lbs)
• Ability to do shift work (daytime, evenings), on call
• Good oral and written English communication skills
• Strong interpersonal skills
• Strong time management skills
