Key Responsibilities:
- Prepare and laminate doughs for croissants, danishes, and other viennoiseries.
- Bake morning viennoiseries
- Ensure consistency and high quality in all products.
- Innovate and create new viennoiserie items in collaboration with the team.
- Manage production schedules and inventory for pastry-related ingredients.
- Maintain cleanliness and organization of the pastry station.
- Adhere to food safety and hygiene standards at all times.
Qualifications:
- Proven experience as a Tourrier or in a similar role specializing in viennoiserie.
- Strong understanding of dough lamination techniques.
- Attention to detail and commitment to delivering top-quality products.
- Ability to work efficiently in a fast-paced environment.
- Team-oriented attitude and excellent communication skills.
- Culinary or pastry school certification is a plus .
- Know how to use a proofer
