The ideal candidate will be responsible for overseeing all aspects of spirit production, from grain to glass. This includes recipe development, distillation, fermentation, barreling, bottling, and compliance. This role will play a critical role in building the distillery’s operational foundation, defining its product line, and ensuring excellence in every bottle.
DUTIES & RESPONSIBILITIES:
- Lead the development and execution of all spirits recipes with an emphasis on quality, innovation, and consistency
- Operate and maintain distillation equipment including mash tuns, fermenters, stills, and other production systems
- Manage raw material selection, fermentation processes, and yield optimization
- Oversee barreling, aging, blending, and bottling operations
- Ensure all production adheres to regulatory standards
- Maintain rigorous quality control and cleanliness protocols throughout the facility
- Collaborate with leadership on new product development and sensory evaluation
- Track inventory of raw materials, spirits in progress, and finished goods
- Hire, train, and supervise future production staff
- Ensure adherence to production schedules, safety protocols, and quality standards
- Collaborate with other departments for smooth operations
- Maintain cleanliness and efficiency of equipment and workspaces

Required Skills
- Strong mechanical aptitude; able to troubleshoot and maintain equipment
- Background in chemistry, biology, brewing, or fermentation science is a plus
- Exceptional organizational and time management skills
- Ability to lift 55 lbs. and perform physical tasks in a production environment
Required Experience
- Minimum 3–5 years of hands-on distilling experience in a commercial setting
- In-depth knowledge of all aspects of spirit production and distillation science
- Familiarity with regulations, record-keeping, and compliance requirements
