The Role: Director of Food & Beverage
Reporting directly to the General Manager, the Director of Food & Beverage is the driving force behind the success of our outlets, banquets, and stewarding departments. You’ll serve as a hands-on mentor, strategic thinker, and collaborative guide—ensuring every guest touchpoint reflects our commitment to quality and excellence.
You’ll work in close partnership with our Executive Chef and cross-functional leadership team to create and execute a bold F&B strategy that aligns with financial goals, guest satisfaction metrics, and brand standards.
Key Responsibilities:
- Lead with Presence: Actively engage with guests and team members, creating a culture of genuine hospitality and service excellence.
- Mentor and Inspire: Guide and develop a high-performing, passionate F&B team. Provide ongoing coaching, recognition, and accountability to ensure professional growth and operational success.
- Strategic Alignment: Design and implement departmental strategies that align with property goals, guest expectations, and brand identity.
- Innovate and Elevate: Drive creativity in menu design, service delivery, promotions, and events. Translate market trends into memorable guest experiences and profitable offerings.
- Financial Stewardship: Oversee F&B budgets, forecasts, and profit plans. Analyze performance, implement cost controls, and ensure departments meet or exceed financial targets.
- Collaborative Leadership: Build strong internal partnerships with key leaders (Executive Chef, Commercial Services, Catering & Events) to ensure seamless event execution and cohesive brand messaging.
- Operational Excellence: Ensure all outlets operate at the highest standard—compliance, cleanliness, safety, quality, and guest satisfaction.
Brand & Community Engagement: Be an ambassador of the Hilton Hotels and Resorts brand, both within the hotel and in the broader hospitality and local community.

What You Bring:
- A minimum of 5 years in senior Food & Beverage leadership at a luxury or full-service property, overseeing multiple outlets and a large banquet operation
- Proven ability to lead and mentor diverse teams with empathy, clarity, and consistency
- Strong business acumen, with experience in budget creation, P&L management, and strategic planning
- A flair for creativity in F&B trends, promotions, and guest engagement
- Deep knowledge of culinary operations and wine/spirit programs
- A collaborative spirit and a drive to innovate, elevate, and exceed expectations
- A degree in Hospitality or F&B Management is a strong asset
- International experience and local market knowledge are highly regarded
