Sultan Ahmet Turkish Cuisine is one of Canada’s highest-rated Turkish restaurants, known for authentic flavors and exceptional service. We are seeking a skilled and experienced Oven Chef to join our busy kitchen and handle the preparation of Turkish Pide, Lahmacun, bread, and Pide toppings.
Sultan Ahmet Turkish Cuisine is hiring a Meat Cutter & Prep Specialist who understands the art of trimming, cleaning, and preparing meat for high-quality Adana, Shish, and Doner. This is not a standard butcher role — we’re looking for someone with attention to detail and deep knowledge of meat handling, quality, and yield.
Duties
-Trim and clean meats (beef, lamb, chicken) by hand, removing sinew, silver skin, tendons, nerves, and unwanted tissue with minimal meat loss
-Cube meat for skewers with precision and consistency
-Assess meat quality upon delivery — including animal age, sex, fat content, and grading — and reject substandard shipments
-Follow exact marination and recipe procedures for Doner, Adana, and Shish with zero deviation
-Monitor meat safety — understand how long meat can remain outside, when to chill or discard
-Prepare daily portions to spec and support high-volume kitchen production
-Maintain hygiene, cleanliness, and FIFO rotation for all meat storage
Experience
-2+ years in a commercial kitchen, preferably in meat prep (not just slicing or grinding)
-Deep understanding of meat structure and anatomy
-Skilled at minimizing waste while maximizing yield
-Able to follow strict prep and marination instructions with no shortcuts
-Reliable, detail-oriented, and efficient under pressure
-Experience with Turkish or Mediterranean cuisine is a bonus
