Role Overview
The Executive Chef is the culinary visionary behind Erica Jane’s kitchen. You will lead menu development, oversee kitchen operations, and inspire a team to produce consistent, high-quality dishes. This is a hands-on leadership role combining creativity, operational dexterity, and mentorship.
Key Responsibilities
- Menu Creativity & Execution: Develop menus that celebrate local, seasonal, and sustainable ingredients. Create daily features and special event offerings reflecting the restaurant’s style and brand.
- Operational Leadership: Oversee all kitchen functions — food prep, inventory, ordering, cost controls, quality assurance, and sanitation (HACCP/CFIA compliance).
- Team Development: Recruit, train, and mentor kitchen staff. Create a collaborative, uplifting environment and coordinate scheduling.
- Budget & Cost Management: Manage food cost targets, budget forecasting, and procurement. Build supplier relationships with local farmers, fisheries, wineries, etc.
- Guest & Brand Excellence: Collaborate with Front-of-House to ensure seamless service. Maintain high standards for plating, presentation, and customer satisfaction.
- Innovation & Outreach: Keep the menu dynamic with seasonal refreshes, special events (wine dinners, tastings), and community engagement.
Qualifications & Skills
- 5+ years in a leadership chef role (Sous Chef, Executive Chef) within high-end, fine-casual, or boutique restaurants.
- Strong culinary foundation in West Coast, Pacific Northwest, or contemporary Canadian cuisine.
- Proven kitchen leadership and team development skills.
- Excellent knowledge of food safety, portion/control techniques, cost analysis, and inventory management.
- Familiarity with local sourcing, sustainability practices, and farm-to-table initiatives.
- Strong communication skills, with an upbeat and positive leadership style.
- Culinary diploma or relevant post-secondary qualification preferred.
- Willingness to work evenings, weekends, and special events.
- Authorized to work in Canada.
